These soft and moist muffins serve well alongside any breakfast dish.
Ingredients
- 1-1/2 cups flour
- 3/4 cup sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/3 cup vegetable oil
- 1 egg
- 1/3 cup milk
- 2 apples, peeled and chopped
- 1 tablespoon sugar
- 1 teaspoon cinnamon
Directions
- Combine flour, 3/4 cup sugar, salt, baking powder and 1 teaspoon cinnamon.
- In a separate bowl, beat together vegetable oil, egg and milk.
- Blend flour combination into egg mixture.
- Fold in apples.
- Pour batter into greased muffin tins.
- Mix together 1 tablespoon sugar and 1 teaspoon cinnamon; sprinkle over top of muffins.
- Bake at 400 degrees for 20-25 minutes.
