Classic Southern canning recipe.
Ingredients
- 20 green tomatoes
- 9 cucumbers
- 6 small onions
- 1 green bell pepper
- 1 bunch celery
- 3 red peppers
- 1 pound snap beans
- 1/2 cup salt
- 2 quarts vinegar
- 2 tablespoons turmeric
- 1 cup brown sugar
- 4 tablespoons mustard seed
- 1 tablespoon cloves
- 1 tablespoon pepper
Directions
- Peel and then dice the tomatoes, cucumbers and onions. Chop the peppers, beans and celery.
- Mix all the vegetables together, layer, topping with salt after each layer. Allow to stand for 24 hours. Drain.
- Mix together the vinegar, sugar and spices. Bring to a boil, stirring frequently. Simmer the vegetables until tender.
- Pour into hot sterilized jars and seal.
