Classic Southern canning recipe.

Ingredients

  • 20 green tomatoes
  • 9 cucumbers
  • 6 small onions
  • 1 green bell pepper
  • 1 bunch celery
  • 3 red peppers
  • 1 pound snap beans
  • 1/2 cup salt
  • 2 quarts vinegar
  • 2 tablespoons turmeric
  • 1 cup brown sugar
  • 4 tablespoons mustard seed
  • 1 tablespoon cloves
  • 1 tablespoon pepper

Directions

  1. Peel and then dice the tomatoes, cucumbers and onions. Chop the peppers, beans and celery.
  2. Mix all the vegetables together, layer, topping with salt after each layer. Allow to stand for 24 hours. Drain.
  3. Mix together the vinegar, sugar and spices. Bring to a boil, stirring frequently. Simmer the vegetables until tender.
  4. Pour into hot sterilized jars and seal.
