A combination of chopped red cabbage and bell peppers gives this salad its satisfying crunchy texture and sharp taste.

Ingredients

  • 1/2 red cabbage
  • 2 red bell peppers
  • 2 cloves garlic
  • 1/2 onion
  • 1/2 tablespoon apple cider vinegar
  • 3 tablespoons olive oil
  • sea salt

Directions

  1. Chop the cabbage and place into a bowl. Cut the peppers in half, remove the seeds and then slice into strips. Place into the bowl with the cabbage.
  2. Finely grate the onion and garlic and add to the bowl along with the olive oil, vinegar and a few pinches of sea salt. Toss well to combine and serve.
