Chocolate Yum-Yum Cake will leave you guests speechless!
Ingredients
- 1/2 cup butter
- 2 squares unsweetened baking chocolate
- 1 cup sugar
- 1/2 cup raisins
- 1 1/2 cups water
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- pinch salt
- 1 1/2 teaspoons vanilla
- 1 3/4 cups flour
- 1 teaspoon baking soda
- Icing: 1/2 cup confectioner's sugar
- 1/4 teaspoon vanilla
- 1 to 2 teaspoons milk
Directions
- In a large saucepan over low heat, melt butter and chocolate, stirring constantly. Add sugar, raisins, water, cinnamon and cloves; bring to a boil. Boil for 5 minutes, stirring occasionally. Remove from heat and pour into a mixing bowl and let cool for 15 minutes. Add salt and vanilla.
- Combine flour and baking soda; add to chocolate mixture and mix well. Pour into a greased and floured 8 cup fluted tube pan.
- Bake at 350 degrees F for 45 minutes or until a wooden pick inserted near the center comes out clean. Cool in pan for 10 minutes before removing to a wire rack to cool.
- Combine icing ingredients; spoon over cooled cake.
