Added spice and tanginess makes Chipotle Polenta with Goat Cheese a tasty, warming and filling side dish.
- 3/4 cup of polenta
- 3 cups of water
- 2 teaspoons prepared chipotle chiles in adobo sauce, minced
- 1/4 cup crumbled goat cheese
- Salt to taste
- In a medium-sized saucepan, bring the water to a boil. To the boiling water add the polenta, chipotles and salt, whisking. Reduce heat to low and continue to whisk for about 5 minutes.
- Remove the pan from the heat and stir in the goat cheese until mixed together thoroughly. Serve warm, garnished with an extra crumble of goat cheese.
