  • 3/4 cup of polenta
  • 3 cups of water
  • 2 teaspoons prepared chipotle chiles in adobo sauce, minced
  • 1/4 cup crumbled goat cheese
  • Salt to taste


  1. In a medium-sized saucepan, bring the water to a boil. To the boiling water add the polenta, chipotles and salt, whisking. Reduce heat to low and continue to whisk for about 5 minutes.
  2. Remove the pan from the heat and stir in the goat cheese until mixed together thoroughly. Serve warm, garnished with an extra crumble of goat cheese.
