Chipotle Meatloaf is a spicy Mexican version of the popular comfort food. Can be served with potatoes and sour cream or corn salad.
Ingredients
- 2 pounds of ground meat
- 1-7 ounce can of chipotles in adobo
- 1 cup breadcrumbs
- 1/2 cup chopped onion
- 1/2 teaspoon garlic (minced)
- 2 teaspoons ground pepper
- 1 teaspoon cumin
Directions
- Preheat oven to 325 degrees
- Combine all ingredients thoroughly.
- Place in large loaf pan or oven casserole.
- Cook for about an hour or until meat is done in the middle
