Chinese Spiced Mushrooms

Serve Chinese Spiced Mushrooms on a bed of crisp lettuce for a unique first course.


  • 1/2 pound fresh mushrooms, wiped clean, stems removed
  • 1 quart boiling water
  • 2 tablespoons soy sauce
  • 1 tablespoon sherry
  • pinch salt
  • Tabasco sauce and sesame oil to taste
  • crisp lettuce leaves


  1. Place mushrooms in colander in sink; pour boiling water over to blanch. Drain and dry thoroughly.
  2. Combine soy sauce, sherry, salt, Tabasco and sesame oil, mixing well. Add mushrooms and toss. Refrigerate 20 minutes. Serve on lettuce leaves.
