Serve Chinese Spiced Mushrooms on a bed of crisp lettuce for a unique first course.
- 1/2 pound fresh mushrooms, wiped clean, stems removed
- 1 quart boiling water
- 2 tablespoons soy sauce
- 1 tablespoon sherry
- pinch salt
- Tabasco sauce and sesame oil to taste
- crisp lettuce leaves
- Place mushrooms in colander in sink; pour boiling water over to blanch. Drain and dry thoroughly.
- Combine soy sauce, sherry, salt, Tabasco and sesame oil, mixing well. Add mushrooms and toss. Refrigerate 20 minutes. Serve on lettuce leaves.
