This creamy and cool soup is the perfect foil to a hot summer day. The fresh taste of mint and the juicy flavor of honeydew melon make it a light and delicious treat.
Ingredients
- 1/2 cup water
- 3 tablespoons honey
- 1 tablespoon chopped mint leaves
- 1/2 medium honeydew melon, cut into 1-inch pieces
- 2 tablespoon lime juice
- 1/2 cup milk
- Mint sprigs to garnish
Directions
- Place the water, honey and mint into a small saucepan and bring to boil. Remove the mixture from the heat and then set aside for 5 minutes.
- Place the mint mixture into a food processor and then add the melon and the lime juice. Process the mixture until smooth and then transfer to a bowl. Stir in the milk and then cover the bowl; refrigerate the soup for 4 hours to chill. Garnish with a sprig of mint prior to serving.
