A creamy, cheesy yellow squash side dish.
- 1 pound yellow squash
- 2/3 cup mayonnaise
- 1 (4 ounce) can diced green chilies, drained
- 2/3 cup shredded longhorn cheese
- 2/3 cup breadcrumbs
- Cook the squash in salted water until tender-crisp. Drain. Return to the pan and combine with the remaining ingredients. Serve while still hot.
