A light-bodied and refreshing cocktail with just the right balance of sweet and sour taste, the Chilcano is a great choice to accompany spicy hors devours.  


  • 1-1/2 ounces pisco
  • juice of 1/2 lemon
  • 1 teaspoon sugar
  • 3 drops Angostura bitters
  • ginger ale
  • Lemon twist to garnish


  1. Place the pisco, lemon juice, sugar and bitters into a cocktail shaker filled with ice.
  2. Vigorously shake the mixture for 35 seconds to combine and then pour into a tall cocktail glass.
  3. Top the drink with the ginger ale, gently stir to combine and then garnish with the lemon twist; serve immediately.
