Chicken with Cherries Jubilee in a Crock Pot

A flaming romantic dish to serve to special guest.

Ingredients

  • 6 chicken breast, boneless and skinless
  • 2 tbsp. butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 can bing cherries - pitted
  • 1 cup chili sauce
  • 2 chicken bouillon cubes
  • 1/4 cup cooking sherry
  • 2 tbsp. cornstarch
  • 2 tbsp. water
  • 3 tbsp. brandy - warmed

Directions

  1. Melt butter in a large frying pan.
  2. Brown chicken on all sides.
  3. Transfer to crock pot.
  4. Season with salt and pepper.
  5. Pour 1/2 cup cherry juice into frying pan.
  6. Stir to loosen drippings.
  7. Pour over chicken.
  8. Add chili sauce and bouillon cubes.
  9. Cover and cook on LOW 6 to 8 hours.
  10. Remove chicken from pot and keep warm.
  11. Pour juices into saucepan.
  12. Skim fat.
  13. Boil until slightly reduced.
  14. Add sherry and remaining cherry juice.
  15. Combine cornstarch and water.
  16. Stir into juice mixture.
  17. Cook until thickened.
  18. Add cherries and heat.
  19. Arrange chicken on warm platter.
  20. Ignite warmed brandy and flame sauce.
  21. Spoon flaming sauce over chicken.
