Flavorful Chicken Pilaf makes a delicious side dish.

Ingredients

  • 3/4 cup celery, coarsely chopped
  • 1 medium onion, chopped
  • 2 tablespoons butter
  • 1/4 cup red sweet pepper, chopped
  • 2 cups cooked rice
  • 1 1/2 cups chicken, chopped
  • salt and pepper to taste

Directions

  1. Saute celery and onion in butter in skillet until tender. Add remaining ingredients. Simmer for 10 minutes, stirring constantly.
