Simple ground chicken meatballs.
- 1 pound ground chicken
- 1 egg, slightly beaten
- 2/3 cup corn bread stuffing mix
- 2 tablespoons sour cream
- Mix together the chicken, egg, and stuffing mix. Form into 16 balls. Brown in a lightly greased skillet. Reduce heat to low and add in 1/4 cup water. Cover and simmer for 15 minutes.
- Stir in a small amount of cooking liquid with the sour cream and then stir the sour cream into the skillet. Heat to a serving temperature.
