Chicken in Pot makes a great one dish meal.
- 2 frying chickens, cut in quarters
- 1/2 cup olive oil
- 1 large onion, chopped
- 1 garlic clove, minced
- 1 teaspoon salt
- 3/4 teaspoon pepper
- 1/2 cup canned tomatoes, drained
- 1/2 cup dry white wine
- In a heavy kettle, brown chicken pieces in olive oil. Sprinkle with onion, garlic, salt and pepper. Cover and simmer for 30 minutes.
- Add tomatoes and wine. Simmer for 30 minutes longer or until chicken is tender and juices run clear.
