Chicken Fingers are smothered in tomato sauce.
- 2 cups cooked chicken, finely chopped
- 1 egg
- 1/2 cup bread crumbs
- 1/4 teaspoon each garlic powder, salt and pepper
- 1/4 cup tomato paste
- Combine chicken, egg, bread crumbs, garlic powder, salt and pepper in a bowl; mix well. Shape mixture into finger size rolls. Place on a lightly oiled baking pan.
- Bake at 350 degrees F for 15 minutes. Mix tomato paste with 1/2 cup water. Pour tomato paste mixture over chicken rolls. Bake for 25 minutes longer or until liquid has evaporated.
