A quick dish inpired by the flavorful curries.

Ingredients

  • 1/2 cup plain yogurt
  • 1/2 cup mayonnaise
  • 3 tablespoons chopped onions
  • 1 teaspoon ground ginger
  • 1 teaspoon curry powder
  • 1 pound skinless, boneless chicken breast cut into 1/2 inch strips
  • 1 teaspoon paprika
  • 1/2 teaspoon ground black pepper
  • 2 cups hot cooked brown rice

Directions

  1. Stir yoguart, mayonnaise, onions, ginger and curry powder together in a bowl and set aside.
  2. Place the chicken in a bowl.
  3. Combine the paprika and pepper.
  4. Sprinkle over the chicken and toss until coated.
  5. In a non stick skillet using medium heat add the chicken.
  6. Cook and stir for 4 minutes.
  7. Stir in the yogurt mixture.
  8. Cook and stir for 2 minutes.
  9. Serve over rice or your favorite noodles.
