Chicken and Dumplings

Simple chicken and dumplings recipe.


  • 1 hen
  • 1 1/2 teaspoons pepper
  • 1 teaspoon salt
  • 3 cups flour
  • 1 cup water, chilled


  1. Cover the meat with water. Stir in the pepper and salt. Boil the chicken until the meat is tender.
  2. Mix together the flour and water until a soft dough forms. Knead until firm. Roll the dough very thin and cut into 1 1/2 inch squares.
  3. Boil 8 cups broth with the chicken. Drop in the dough, continue rolling and dropping stirring gently. Once all the dumplings have been added reduce the heat and simmer until the dough is firm, about 10 minutes.
