Have a craving for cheesy risotto but only have 20 minutes to spare? Whip up this amazing Italian herb seasoned cheesy rice pilaf instead! You get the creamy, milky flavors typical with risotto -- but in a much quicker timespan! Plus, the use of wild grain rice and organic chicken broth make this not only delicious, but super healthy too!

Ingredients

  • 1/2 large onion, chopped
  • 1 clove garlic, minced
  • 1 cup wild grain rice
  • 2 tablespoons Italian seasoning
  • 2 tablespoons olive oil
  • 3/4 cup mozzarella cheese
  • 2 cups organic chicken broth
  • 1 teaspoon salt
  • 1 tablespoon parsley

Directions

  1. In a medium saucepan, heat one tablespoon of oil. Add onion and cook until softened, about three minutes. Add garlic and cook until fragrant.
  2. Add in broth and bring to a boil. Once boiling, add rice, seasoning, salt and pepper. Cover, reduce heat and let simmer for at least 20 minutes or until mixture is thick and rice is fully cooked.
  3. Add parsley and cheese, stir to combine. Serve warm.
