Cheesy Artichoke Casserole is a great side dish.  It can be doubled and makes a fabulous hot appetizer.

Ingredients

  • 3 cloves of garlic, minced
  • 6 green onions, chopped
  • 1 tablespoon butter
  • 1, 14 ounce jar marinated artichoke hearts, drained and cut into pieces
  • 5 eggs, beaten
  • 6 soda crackers, crushed
  • 4 drops Tabasco sauce
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 1/2 cups Cheddar cheese, shredded

Directions

  1. Saute garlic and onions in butter for five minutes. Mix this with the artichoke hearts. Add the eggs, cracker crumbs, Tabasco sauce, salt, pepper and cheese. Mix and pour into a lightly greased 8 inch square baking pan.
  2. Bake at 350 degrees F for 25 minutes. Cut into squares.
