Cheddar Vegetable Surprise has a touch of soy sauce for a surprising, fabulous flavor.
Ingredients
- 3 cups brown rice, cooked
- 1 cup carrots, shredded
- 1 cup broccoli florets
- 1 cup onion, chopped
- 1 cup mushrooms, sliced
- 1/4 cup soy sauce
- 2 tablespoons sesame seeds
- 1 cup zucchini, chopped
- 4 ounces low fat Cheddar cheese, shredded
- 1 cup canned tomatoes, chopped
Directions
- Spread rice in a shallow baking pan. Cover with vegetables. Cover vegetables with cheese, distributing evenly. Pour soy sauce over all and sprinkle with sesame seeds. Bake at 350 degrees F for 45 minutes.
