Cheddar Vegetable Surprise has a touch of soy sauce for a surprising, fabulous flavor.

Ingredients

  • 3 cups brown rice, cooked
  • 1 cup carrots, shredded
  • 1 cup broccoli florets
  • 1 cup onion, chopped
  • 1 cup mushrooms, sliced
  • 1/4 cup soy sauce
  • 2 tablespoons sesame seeds
  • 1 cup zucchini, chopped
  • 4 ounces low fat Cheddar cheese, shredded
  • 1 cup canned tomatoes, chopped

Directions

  1. Spread rice in a shallow baking pan. Cover with vegetables. Cover vegetables with cheese, distributing evenly. Pour soy sauce over all and sprinkle with sesame seeds. Bake at 350 degrees F for 45 minutes.
