Serve this spread as an appetizer, along with some whole-wheat crackers and crudités, or slather a thick layer in your favorite sandwich as a sharp and creamy-tasting condiment.
- 2 cups grated extra-sharp cheddar cheese
- 2 canned roasted red peppers, chopped, drained and patted dry
- 1/4 cup mayonnaise, more if desired
- 1/2 teaspoon dry mustard
- 1/4 teaspoon cayenne
- Place all of the ingredients into a food processor and blend until the mixture is smooth and creamy. Serve immediately or store in an air-tight container for up to 4 days in the refrigerator.
