Pork loin cooked over a charcoal fire.
Ingredients
- 5-6 pounds pork loin
- 1 cup butter
- 1/4 cup olive oil
- 1 tablespoon onion powder
- 3/4 teaspoon garlic salt
- 1 1/2 teaspoons celery salt
- 1 teaspoon pepper
- 1/2 teaspoon salt
- 1/4 cup lemon juice
- 2 tablespoon brown sugar
- 1 tablespoon mustard
- 1 1/2 cups Worcestershire sauce
Directions
- Crosscut the loin, to the bone, every 2 inches. Combine the salt and pepper and rub into the cut sections.
- Heat the oil in a saucepan. Mix in the butter and mustard, stirring until combined. Add the remaining ingredients.
- Place the pork loin over a charcoal fire, lacing the coals with sassafras chips. Cook, basting with the sauce to keep it moist, until the meat begins to separate from the bone.
