Pork loin cooked over a charcoal fire.

Ingredients

  • 5-6 pounds pork loin
  • 1 cup butter
  • 1/4 cup olive oil
  • 1 tablespoon onion powder
  • 3/4 teaspoon garlic salt
  • 1 1/2 teaspoons celery salt
  • 1 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/4 cup lemon juice
  • 2 tablespoon brown sugar
  • 1 tablespoon mustard
  • 1 1/2 cups Worcestershire sauce

Directions

  1. Crosscut the loin, to the bone, every 2 inches. Combine the salt and pepper and rub into the cut sections.
  2. Heat the oil in a saucepan. Mix in the butter and mustard, stirring until combined. Add the remaining ingredients.
  3. Place the pork loin over a charcoal fire, lacing the coals with sassafras chips. Cook, basting with the sauce to keep it moist, until the meat begins to separate from the bone.
