Use chilled champagne or sparkling wine to top the absinthe in this lovely anise-flavored beverage.


  • 1 part absinthe
  • 10 parts chilled sparkling wine or chilled champagne


  1. Place a champagne flute in the freezer for 5 minutes to chill.
  2. Pour the absinthe into the prepared glass and top with the sparkling wine. Serve immediately.
