Use chilled champagne or sparkling wine to top the absinthe in this lovely anise-flavored beverage.
- 1 part absinthe
- 10 parts chilled sparkling wine or chilled champagne
- Place a champagne flute in the freezer for 5 minutes to chill.
- Pour the absinthe into the prepared glass and top with the sparkling wine. Serve immediately.
