This amazing dip takes only seconds to prepare when you have the ingredients on hand. Serve with your choice of crackers, chips of roasted veggies.
- 2 cups spinach
- 1/2 cup roasted cashews
- 2 tablespoons sundried tomatoes plus some to garnish
- 1/4 cup of Greek salad dressing
- Put all of the ingredients into a food processor and blend until the mixture reaches a smooth, dip-like consistency. Transfer the dip to a bowl, garnish with a few chopped sundried tomatoes and serve immediately.
