Carrot salad with coconut and pineapple.
- 1 (8 1/2 ounce) can crushed pineapple
- 1 1/2 cups shredded carrots
- 3/4 cup flaked coconut
- 1 tablespoon sugar
- 2 tablespoons mayonnaise
- Drain the pineapple, being sure to reserve 1/2 cup of the juice.
- Mix together the carrots, pineapple, coconut and sugar.
- Whisk together the pineapple juice and mayonnaise until smooth.
- Drizzle over the carrot mixture and mix well. Chill.
