Carrot salad with coconut and pineapple.

Ingredients

  • 1 (8 1/2 ounce) can crushed pineapple
  • 1 1/2 cups shredded carrots
  • 3/4 cup flaked coconut
  • 1 tablespoon sugar
  • 2 tablespoons mayonnaise

Directions

  1. Drain the pineapple, being sure to reserve 1/2 cup of the juice.
  2. Mix together the carrots, pineapple, coconut and sugar.
  3. Whisk together the pineapple juice and mayonnaise until smooth.
  4. Drizzle over the carrot mixture and mix well. Chill.
