This elegant salad is made by slicing carrots with a vegetable peeler into thin strips.


  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 4 carrots, peeled
  • 1/3 cup sliced green onions


  1. Peel the carrots into long strips using a vegetable peeler and place into a salad bowl.
  2. Add the sliced green onion and toss to combine.
