These sweet muffins make an excellent breakfast snack, especially during those busy morning routines.
Ingredients
- 1 cup raisins
- 2 cups water
- 2 cups flour
- 1 tablespoon baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 tablespoon cinnamon
- 4 eggs
- 1/2 cup vegetable oil
- 1/2 cup applesauce
- 3/4 cup brown sugar
- 3 cups grated carrots
Directions
- Combine raisins and water; drain and set aside.
- Combine flour, baking powder, baking soda, salt and cinnamon.
- In a separate bowl, beat eggs, vegetable oil, applesauce and brown sugar.
- Blend flour combination into applesauce mixture.
- Fold in raisins and carrots.
- Pour batter into greased muffin tins.
- Bake at 350 degrees for 20-30 minutes.
