These sweet muffins make an excellent breakfast snack, especially during those busy morning routines.

Ingredients

  • 1 cup raisins
  • 2 cups water
  • 2 cups flour
  • 1 tablespoon baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 tablespoon cinnamon
  • 4 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup applesauce
  • 3/4 cup brown sugar
  • 3 cups grated carrots

Directions

  1. Combine raisins and water; drain and set aside.
  2. Combine flour, baking powder, baking soda, salt and cinnamon.
  3. In a separate bowl, beat eggs, vegetable oil, applesauce and brown sugar.
  4. Blend flour combination into applesauce mixture.
  5. Fold in raisins and carrots.
  6. Pour batter into greased muffin tins.
  7. Bake at 350 degrees for 20-30 minutes.
