Creamy carrot casserole, slow cooked to perfection.

Ingredients

  • 8 cups sliced carrots
  • 1 onion, chopped
  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 (4 ounce) can sliced mushrooms, drained
  • 1/4 cup evaporated milk
  • 1 cup crushed butter flavored crackers

Directions

  1. Mix everything but the crackers together in the slow cooker. Cover and cook on low for 8-10 hours. With 30 minutes left, stir and sprinkle the crackers on top. Recover and continue cooking for the 30 remaining minutes.
