Carrot cake taste in quick and easy cookie form.

Ingredients

  • 1 1/2 cups flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup packed brown sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins

Directions

  1. Preheat the oven to 350 degrees Fahrenheit. Grease cookie sheets.
  2. Mix together the flour, cinnamon, baking soda and salt.
  3. Cream the butter and sugar, add in the egg and vanilla, blending well.
  4. Blend in the flour. Fold in the carrots, walnuts and raisins, blending well.
  5. Drop rounded tablespoons of dough onto the prepared sheets, 2 inches apart. Bake for 12-14 minutes or until the edges are lightly browned.
  6. Cool for 1 minute before moving to racks.
