This sweet cake makes a cozy afternoon snack, especially alongside a hot cup of coffee.  Can be topped with an orange cream cheese frosting which consists of an 8-ounce package of cream cheese, 2 cups powdered sugar and 1 tablespoon orange juice concentrate mixed together.

Ingredients

  • 1-1/2 cups flour
  • 1 cup quick-cooking oats
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 egg
  • 1 egg white
  • 3/4 cup brown sugar
  • 1/2 cup sugar
  • 1-1/4 cups applesauce
  • 3 cups shredded carrots
  • 1 cup shredded apple
  • 3/4 cup raisins

Directions

  1. Combine flour, oats, baking soda, cinnamon, nutmeg and salt; set aside.
  2. Cream egg, egg white, sugar, brown sugar and applesauce.
  3. Blend flour combination into applesauce mixture.
  4. Fold in carrot, apple and raisins.
  5. Pour batter into a greased 9x13 baking dish.
  6. Bake at 350 degrees for 30-35 minutes.
