This cool and crunchy carrot and raisin salad pairs well with sandwiches or can be served in place of cole slaw.
Ingredients
- 2 cups coarsely shredded carrot
- 1/2 cup raisins
- 1/2 cup plain Greek yogurt
Directions
- Place the carrots, raisins and yogurt into a bowl and stir well to combine. Cover the bowl and place in the refrigerator for 2 hours to chill and to allow the flavors to blend.
