If you are short on time and don’t have a food processor, buy a bag of pre-shredded carrots and get this salad on the table in minutes.
Ingredients
- 7 cups carrots, shredded
- 1 cup onion, thinly sliced
- 1/3 cup green onion, sliced
- 1/3 cup water
- 1 tablespoon brown sugar
- 5 tablespoons apple cider vinegar
- 3 tablespoons grape seed oil
- 1/3 cup fresh cilantro
- 1/2 teaspoon salt
- 3 grinds freshly ground pepper
- pinch of hot pepper
Directions
- Place the carrots, onion and the green onion into a large salad bowl.
- In a small bowl, combine the water, brown sugar, vinegar, oil, cilantro, salt, pepper and hot pepper. Whisk to combine and then pour over the carrot mixture.
- Toss the salad to combine and serve.
