Caribbean Carrot Salad

If you are short on time and don’t have a food processor, buy a bag of pre-shredded carrots and get this salad on the table in minutes.


  • 7 cups carrots, shredded
  • 1 cup onion, thinly sliced
  • 1/3 cup green onion, sliced
  • 1/3 cup water
  • 1 tablespoon brown sugar
  • 5 tablespoons apple cider vinegar
  • 3 tablespoons grape seed oil
  • 1/3 cup fresh cilantro
  • 1/2 teaspoon salt
  • 3 grinds freshly ground pepper
  • pinch of hot pepper


  1. Place the carrots, onion and the green onion into a large salad bowl.
  2. In a small bowl, combine the water, brown sugar, vinegar, oil, cilantro, salt, pepper and hot pepper. Whisk to combine and then pour over the carrot mixture.
  3. Toss the salad to combine and serve.
