Ingredients

  • 1-1/2 cups flour
  • 1/2 cup sugar
  • 1 envelope instant cappuccino mix
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 eggs, lightly beaten
  • 1/2 cup brewed coffee, room temperature
  • 1/2 cup vanilla flavored yogurt
  • 1/4 cup butter
  • 1/2 cup chopped almonds
  • 1/2 cup dried apricots, chopped

Directions

  1. Preheat oven to 375 degrees.
  2. Beat eggs, coffee, yogurt and butter.
  3. Combine flour, sugar, cappuccino mix, baking powder, cinnamon and salt.
  4. Blend flour combination into egg mixture.
  5. Fold in almonds and apricots.
  6. Pour batter into prepared muffin tins.
  7. Bake at 375 degrees for 25-30 minutes.
