This is a great tangy sauce to serve on any fish.

Ingredients

  • 2 tablespoons butter
  • 1/4 cup chopped onion
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1 1/2 cups milk
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons drained capers
  • 1 tablespoon chopped parsley

Directions

  1. Melt butter and saute onion in a skillet until tender.
  2. Blend in flour and salt.
  3. Mix well.
  4. Add milk, stirring constantly.
  5. Cook until suace is smooth and has thickened.
  6. Stir in lemon juice, capers and parsley.
  7. Yields 1 1/2 cups.
