Thick and rich with an enjoyable tangy and salty bite, this caper and avocado dressing is ideal for a simple romaine salad.
Ingredients
- 1/4 cup ripe Haas avocado, pitted, peeled, and diced (about 1/4 Haas avocado)
- 3 tablespoons shallots, peeled and finely minced
- 1-1/2 tablespoons capers, soaked for 10 minutes in 1/2 cup water
- 1/2 tablespoon garlic, peeled and finely minced
- 1/2 teaspoon Dijon mustard
- 1/8 cup extra virgin olive oil
- 1/4 tablespoon apple cider vinegar
- 1/8 cup freshly squeezed lemon juice
- 3/8 cup water
- 1/8 teaspoon ground thyme
- 1/4 teaspoon ground oregano
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon sea salt, or to taste
Directions
- Place all of the ingredients into a blender and process the mixture until smooth and creamy. Add additional salt and pepper to taste and then serve immediately.
