Thick and rich with an enjoyable tangy and salty bite, this caper and avocado dressing is ideal for a simple romaine salad.


  • 1/4 cup ripe Haas avocado, pitted, peeled, and diced (about 1/4 Haas avocado)
  • 3 tablespoons shallots, peeled and finely minced
  • 1-1/2 tablespoons capers, soaked for 10 minutes in 1/2 cup water
  • 1/2 tablespoon garlic, peeled and finely minced
  • 1/2 teaspoon Dijon mustard
  • 1/8 cup extra virgin olive oil
  • 1/4 tablespoon apple cider vinegar
  • 1/8 cup freshly squeezed lemon juice
  • 3/8 cup water
  • 1/8 teaspoon ground thyme
  • 1/4 teaspoon ground oregano
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon sea salt, or to taste


  1. Place all of the ingredients into a blender and process the mixture until smooth and creamy. Add additional salt and pepper to taste and then serve immediately.

This recipe does nothing to enhance the mild taste of avocado. It's also quite thick. If I make it again, I'll use lemon juice only and no mustard, oregano or olive oil at all. Not at all what I was expecting.
