California Sweet Potatoes

California Sweet Potatoes

California Sweet Potatoes are flavored with sunny orange and topped with fluffy marshmallows.

Ingredients

  • 6 medium sweet potatoes
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon salt
  • 1 tablespoon cornstarch
  • 1 cup orange juice
  • 2 teaspoons grated orange rind
  • mini marshmallows

Directions

  1. Boil potatoes with skins on until tender. Peel and cut in halves. Arrange in baking dish with a cover.
  2. Combine sugar, salt and cornstarch in saucepan. Stir in orange juice and rind. Simmer while stirring until smooth and thickened--about 5 minutes. Pour over potatoes.
  3. Bake at 350 degrees F for 20 minutes covered. Uncover and sprinkle top with marshmallows. Bake an additional 15 minutes longer uncovered to brown marshmallows.
