Instead of white or chocolate chips, these chewy cookies are full of butterscotch.

Ingredients

  • 1 cup butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 3 cups flour
  • 1 teaspoon baking soda
  • 2 teaspoons hot water
  • 1/2 teaspoon salt
  • 2 cups butterscotch chips

Directions

  1. Preheat oven to 350 degrees.
  2. Mix together butter, sugar, brown sugar and eggs until mixture becomes creamy.
  3. Stir in vanilla.
  4. Dissolve baking soda in hot water; add to batter.
  5. Stir in flour and salt.
  6. Fold in butterscotch chips.
  7. Drop by teaspoon onto prepared cookie sheets.
  8. Bake at 350 degrees for 10 minutes.
