Frost Butter Pecan Cake with seafoam or vanilla frosting.  Also tastes great plain.

Ingredients

  • 2-1/4 cups flour, sifted
  • 2/3 cup sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup packed brown sugar
  • 3/4 cup shortening
  • 1 cup milk
  • 3 eggs
  • 1 teaspoon vanilla extract
  • finely chopped pecans

Directions

  1. Sift first 4 ingredients together into a bowl. Stir in brown sugar. Add shortening and 3/4 cup milk. Beat for 2 minutes.
  2. Add eggs, remaining 1/4 cup milk and vanilla. Beat for 2 minutes longer. Stir in 3/4 cup pecans.
  3. Pour into greased and floured 9 x 13-inch baking pan. Bake at 375 degrees F for 45 to 50 minutes.
  4. Let cool completely and frost as desired. Sprinkle top with additional pecans.
