Frost Butter Pecan Cake with seafoam or vanilla frosting. Also tastes great plain.
Ingredients
- 2-1/4 cups flour, sifted
- 2/3 cup sugar
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 cup packed brown sugar
- 3/4 cup shortening
- 1 cup milk
- 3 eggs
- 1 teaspoon vanilla extract
- finely chopped pecans
Directions
- Sift first 4 ingredients together into a bowl. Stir in brown sugar. Add shortening and 3/4 cup milk. Beat for 2 minutes.
- Add eggs, remaining 1/4 cup milk and vanilla. Beat for 2 minutes longer. Stir in 3/4 cup pecans.
- Pour into greased and floured 9 x 13-inch baking pan. Bake at 375 degrees F for 45 to 50 minutes.
- Let cool completely and frost as desired. Sprinkle top with additional pecans.
