This rich dressing is made by blending butter, egg yolks, garlic and fresh lemon juice together. Spoon it over poached eggs, smoked salmon and vegetable appetizers and salads. 


  • 6 tablespoons butter
  • juice of 1 lemon
  • 2 free-range egg yolks
  • 1 clove garlic, crushed
  • Sea salt and freshly ground black pepper


  1. Place the butter into a small saucepan over medium heat. Once melted, add the lemon juice, egg yolks, garlic and a few pinches of salt and pepper and whisk well for 2 minutes until thoroughly combined. Serve immediately.
