Brunch Popovers are great for breakfast and can be served with sweet jams or savory ham and bacon.  Cut off the tops and fill with ice cream for a unique dessert.


  • 2 eggs
  • 1 cup flour
  • 2 teaspoons sugar
  • 1 cup milk
  • 1/2 teaspoon salt
  • melted butter for greasing muffin tins


  1. Place ingredients in blender and blend until smooth.
  2. Pour a bit of melted butter in each muffin tin. Pour batter into muffin tins about 1/2 full.
  3. Bake at 400 degrees F for 40 minutes or until puffed and golden brown.
