Brown Rice Risotto is a low calorie, low fat alternative to  cream-based risotto. It is quick and easy and oh so delicious.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon garlic (chopped)
  • 1/4 cup green onions (chopped)
  • 1 cup short grain brown rice
  • 2 cups vegetable broth
  • 1/3 cup frozen peas

Directions

  1. In a medium saucepan heat olive oil and saute garlic.
  2. Add onions and rice
  3. Cook until rice is translucent and coated
  4. In a separate pan heat vegetable broth and add one cup at a time to rice until all liquid is absorbed by the rice.
  5. Add peas.
  6. Cover and for 5 minutes
  7. Stir and serve
