Breast of Veal is roasted with fresh vegetables and flavored with a touch of cinnamon.
Ingredients
- 1/2 bunch fresh spinach
- 1 carrot, cut in chunks
- 1/2 onion, chopped
- 2 garlic cloves, minced
- 4 slices bread, toasted and crushed
- 1/4 teaspoon cinnamon
- black pepper
- rosemary
- 2 teaspoon lemon juice
- 1 tablespoon olive oil
Directions
- Brown carrot, onion and garlic in 1 tablespoon olive oil. Place spinach and toast in a baking pan.
- Sprinkle veal pocket with cinnamon, rosemary, black pepper and lemon juice. Place in pan bone side down. Cook, covered, for 30 minutes. Then cook, uncovered, for 45 minutes.
