Breast of Veal is roasted with fresh vegetables and flavored with a touch of cinnamon.

Ingredients

  • 1/2 bunch fresh spinach
  • 1 carrot, cut in chunks
  • 1/2 onion, chopped
  • 2 garlic cloves, minced
  • 4 slices bread, toasted and crushed
  • 1/4 teaspoon cinnamon
  • black pepper
  • rosemary
  • 2 teaspoon lemon juice
  • 1 tablespoon olive oil

Directions

  1. Brown carrot, onion and garlic in 1 tablespoon olive oil. Place spinach and toast in a baking pan.
  2. Sprinkle veal pocket with cinnamon, rosemary, black pepper and lemon juice. Place in pan bone side down. Cook, covered, for 30 minutes. Then cook, uncovered, for 45 minutes.
