Though full of healthy ingredients, these muffins make a tasty treat in the morning.
Ingredients
- 2 cups rolled oats, finely ground
- 1/2 cup flour
- 2 tablespoons whole wheat flour
- 1/2 cup brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1-1/2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1 cup buttermilk
- 3 egg whites
- 1 tablespoon butter, melted
- 3 tablespoons corn oil
- 1 teaspoon vanilla
- 1 apple, peeled and finely chopped
- 1 tablespoon sugar
Directions
- Combine oats, flour, whole wheat flour, brown sugar, baking powder, baking soda, salt, cinnamon and nutmeg.
- In a separate bowl, mix together buttermilk, egg whites, butter, corn oil and vanilla. Blend into flour combination. Stir in apple pieces.
- Pour batter into a greased muffin tin. Sprinkle sugar over top of muffins. Bake at 400 degrees F for 20-25 minutes.
