Though full of healthy ingredients, these muffins make a tasty treat in the morning.

Ingredients

  • 2 cups rolled oats, finely ground
  • 1/2 cup flour
  • 2 tablespoons whole wheat flour
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1-1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup buttermilk
  • 3 egg whites
  • 1 tablespoon butter, melted
  • 3 tablespoons corn oil
  • 1 teaspoon vanilla
  • 1 apple, peeled and finely chopped
  • 1 tablespoon sugar

Directions

  1. Combine oats, flour, whole wheat flour, brown sugar, baking powder, baking soda, salt, cinnamon and nutmeg.
  2. In a separate bowl, mix together buttermilk, egg whites, butter, corn oil and vanilla. Blend into flour combination. Stir in apple pieces.
  3. Pour batter into a greased muffin tin. Sprinkle sugar over top of muffins. Bake at 400 degrees F for 20-25 minutes.
