Potassium and fiber packed banana bran muffins make a quick and power packed breakfast for the kids.
Ingredients
- Vegetable oil spray
- 2 cups whole wheat bran cereal (not flakes)
- 1/2 cup skim milk
- 2 bananas, mashed (1 cup)
- 1/3 cup margarine
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1 egg
- 1 cup flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup raisins
Directions
- Preheat the oven to 400 degrees Fahrenheit. Grease a 12 cup muffin tin with the vegetable oil spray.
- Mix together the cereal, milk and bananas until well combined.
- In a separate bowl cream the margarine, sugar and vanilla together. Mix in the egg and then beat in the banana mixture.
- Stir together the flour, baking powder and salt. Mix in with the banana mixture, stirring just until mixed. Fold in raisins.
- Scoop into the prepared pan. Bake for 18-20 minutes or until lightly browned.
