Potassium and fiber packed banana bran muffins make a quick and power packed breakfast for the kids.

Ingredients

  • Vegetable oil spray
  • 2 cups whole wheat bran cereal (not flakes)
  • 1/2 cup skim milk
  • 2 bananas, mashed (1 cup)
  • 1/3 cup margarine
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup raisins

Directions

  1. Preheat the oven to 400 degrees Fahrenheit. Grease a 12 cup muffin tin with the vegetable oil spray.
  2. Mix together the cereal, milk and bananas until well combined.
  3. In a separate bowl cream the margarine, sugar and vanilla together. Mix in the egg and then beat in the banana mixture.
  4. Stir together the flour, baking powder and salt. Mix in with the banana mixture, stirring just until mixed. Fold in raisins.
  5. Scoop into the prepared pan. Bake for 18-20 minutes or until lightly browned.
