Great batter to make ahead of time, as it can be kept in the refrigerator for up to a month. Muffins can be bake in the microwave if desired, for 1 1/2- 2 minutes each.
Ingredients
- 1 1/2 cup sugar
- 1/2 cup shortening
- 2 eggs
- 1 cup boiling water
- 3 cups 100% bran
- 2 1/2 cups flour
- 1 1/2 teaspoons salt
- 2 teaspoons soda
- 1 pint buttermilk
Directions
- Beat together the sugar, shortening and eggs. Mix in the water and bran. Stir in the dry ingredients and milk.
- Fill muffin cups 2/3 full and bake at 375 degrees Fahrenheit for 15-20 minutes.
