Braised Hearts of Celery are zipped up with pimento and flavored with chicken and oregano.
- 2 large bunches celery
- 1 medium onion, chopped
- 2 chicken flavor bouillon cubes
- 3 tablespoons butter
- 3/4 teaspoon oregano
- 1/2 teaspoon salt
- 1, 2 ounce jar diced pimentos, drained
- Remove outer rows of celery ribs; trim root ends. Cut tops and leaves from celery 6 to 8 inches from root ends. Cut each bunch of celery lengthwise into quarters.
- In 12 inch skillet over high heat, in 1 inch boiling water, heat celery, onion and bouillon to boiling. Reduce heat to medium; cover and cook 15 minutes or until celery is fork-tender; drain. Stir in butter and remaining ingredients.
