This is one of the best Bouillabaisse I have ever tasted.
Ingredients
- 1 onion, chopped
- 3 stalks celery & leaves, chopped
- 3 cloves garlic, minced
- 1/2 cup olive oil
- 2 cups clam juice
- 1/4 cup fresh parsley, chopped
- 3 tomatoes, diced
- 1 teaspoon salt
- 1/2 teaspoon thyme
- 1 tablespoon paprika
- 1/2 cup dry white wine
- 1/8 teaspoon saffron
- 1/4 teaspoon hot pepper sauce
- 3 pounds mixed white fish (halibut, etc.)
- 1 pound lobster tails
- 1 pound crabmeat
- 1 pound shrimp, shelled, deveined
- 24 clams, mussels or scallops
Directions
- Put all ingredients, except seafood, in crock pot. Cover and cook on low 4 to 6 hours (high 2 to 4 hours).
- Add seafood.
- Cover and cook on high 1 to 3 hours.
- Garnish with fresh parsley.
