This is one of the best Bouillabaisse I have ever tasted.

Ingredients

  • 1 onion, chopped
  • 3 stalks celery & leaves, chopped
  • 3 cloves garlic, minced
  • 1/2 cup olive oil
  • 2 cups clam juice
  • 1/4 cup fresh parsley, chopped
  • 3 tomatoes, diced
  • 1 teaspoon salt
  • 1/2 teaspoon thyme
  • 1 tablespoon paprika
  • 1/2 cup dry white wine
  • 1/8 teaspoon saffron
  • 1/4 teaspoon hot pepper sauce
  • 3 pounds mixed white fish (halibut, etc.)
  • 1 pound lobster tails
  • 1 pound crabmeat
  • 1 pound shrimp, shelled, deveined
  • 24 clams, mussels or scallops

Directions

  1. Put all ingredients, except seafood, in crock pot. Cover and cook on low 4 to 6 hours (high 2 to 4 hours).
  2. Add seafood.
  3. Cover and cook on high 1 to 3 hours.
  4. Garnish with fresh parsley.
