Hearty and delicious Blueberry Oatmeal Muffins are made moist and tender with the addition of yogurt.

Ingredients

  • 1 egg, slightly beaten
  • 1 cup fat free vanilla yogurt
  • 1/4 cup butter, softened
  • 1 1/4 cups flour
  • 1 cup quick cooking oats
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen (thawed and drained) blueberries

Directions

  1. Heat oven to 400 degrees F. Line 12 medium muffin cups with paper baking cups or grease bottom only of muffin cups.
  2. Mix all ingredients except blueberries just until flour is moistened. Fold in blueberries. Divide batter evenly among muffin cups. Bake 20 to 25 minutes or until golden brown. Immediately remove from pan.
