Blueberry Fruit Jam

Spread this jam over your toast, pancakes or waffles.

Ingredients

  • 1 teaspoon unflavored gelatin
  • 1/4 cup water
  • 2 cups fresh blueberries
  • 1/2 cup water
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice

Directions

  1. Comvine gelatin and 1/4 cup water.
  2. Stir well and set aside.
  3. Combine blueberries, 1/2 cup water, sugar and lemon juice in a saucepan.
  4. Bring to a boil.
  5. Reduce heat and simmer uncovered for 8 minutes, stirring frequently.
  6. Remove saucpan from heat.
  7. Add gelatin, stirring until gelatin is dissolved.
  8. Cool to room temperature.
  9. Pour into two glass jars and covr tightly.
  10. Refrigerate for 5 to 7 hours until chlled.
  11. Can be stored in frig for a month.
