Shockingly pink cold soup, a quick make in the blender.

Ingredients

  • 1 cup sour cream
  • 1 (1 pound) can diced beets, chilled and drained
  • 1 (1/2 inch) slice lemon, peeled
  • 1/2 small onion, sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 cup crushed ice

Directions

  1. Mix in 3/4 cup of the sour cream, the beets, lemon, onion, salt and sugar. Blend on high for about 15 seconds. Use a spatula to scrape down the sides of the blender. Add in the ice.
  2. Blend for an additional 10 seconds. Serve right away, topped with dollops of the remaining sour cream.
