Shockingly pink cold soup, a quick make in the blender.
- 1 cup sour cream
- 1 (1 pound) can diced beets, chilled and drained
- 1 (1/2 inch) slice lemon, peeled
- 1/2 small onion, sliced
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1 cup crushed ice
- Mix in 3/4 cup of the sour cream, the beets, lemon, onion, salt and sugar. Blend on high for about 15 seconds. Use a spatula to scrape down the sides of the blender. Add in the ice.
- Blend for an additional 10 seconds. Serve right away, topped with dollops of the remaining sour cream.
